Ginger-Sweet Potato Soup

Ingredients
- 3 tablespoons Butter
- 3/4 cup chopped onion
- 1/2 teaspoon minced garlic
- 1 pound sweet potatoes, peeled and diced (2 medium)
- 3 1/2 cups Water
- 3 tablespoons Santa Cruz Organic® 100% Ginger Juice
- 1 tablespoon packed brown sugar
- 1/2 teaspoon Salt
Directions
- Step 1
MELT butter in large saucepan over medium heat. Add onion and garlic; cook 3 minutes, stirring occasionally.
- Step 2
ADD sweet potatoes, water, ginger juice, brown sugar and salt. Bring to a boil over high heat. Reduce heat to medium-low. Simmer, uncovered, 20 minutes or until sweet potato is completely tender.
- Step 3
PLACE mixture in blender container, in batches if necessary. Cover and process until smooth. Pour into serving bowls. Garnish as desired.
