Black Bean Quinoa Salad

Ingredients
- 1 cup uncooked truRoots® Organic Quinoa
- 2 cups Water
- 1/3 cup Extra Virgin Olive Oil
- 1/4 cup Santa Cruz Organic® Pure Lime Juice
- 1 teaspoon ground cumin
- 1/2 teaspoon Salt
- 1 (14.5 oz.) can black beans rinsed and drained
- 1/2 cup red ripe Roma tomatoes, seeded and chopped
- 1/2 cup diced red onion
- 1/4 cup diced red pepper
- 1/4 cup jalapeños, seeded and chopped
- 2 tablespoons chopped fresh cilantro
Directions
- Step 1
COOK quinoa according to package directions. Cool to room temperature. Fluff with fork.
- Step 2
WHISK together oil, lime juice, cumin and salt in large bowl.
- Step 3
ADD quinoa, black beans, tomatoes, onions, red pepper, jalapenos and cilantro to bowl. Stir to combine. Chill 30 minutes.
