Cherry Pie with Almond Whipped Cream

Ingredients
- CHERRY PIE FILLING
- 3/4 cup R.W. Knudsen Family® Cherry Cider Flavored Juice Blend
- 1 teaspoon Santa Cruz Organic® Pure Lemon Juice
- 3/4 cup Sugar
- 3 tablespoons corn starch
- 1/2 teaspoon Ground cinnamon
- 1/4 teaspoon ground nutmeg
- 5 cups frozen tart red cherries, thawed and drained
- 1/4 teaspoon almond extract
- 1 (9-inch) deep-dish pie crust, baked
- ALMOND WHIPPED CREAM
- 1/2 cup cold heavy cream
- 2 ounces cream cheese, softened
- 1 1/2 tablespoons Powdered sugar
- 1/8 teaspoon almond extract
Directions
- Step 1
WHISK juices, sugar, corn starch, cinnamon and nutmeg in large saucepan. Add cherries. Bring to a boil over medium-high heat, stirring constantly. Reduce heat to low. Cook 5 minutes, stirring frequently. Stir in almond extract. Pour into prepared pie crust. Chill 2 hours or until set.

BEAT cream in large bowl with mixer on medium-high speed until soft peaks form. Beat in cream cheese, powdered sugar and almond extract until smooth. Cover and chill. Serve with pie.
