Ingredients

  • 1 1/2 cups R.W. Knudsen Family® Very Veggie Spicy! Vegetable Juice Blend chilled
  • 3 tablespoons Santa Cruz Organic® Pure Lime Juice
  • 2 tablespoons chopped cilantro, plus sprigs for garnish
  • 1 teaspoon minced fresh garlic
  • 1/8 teaspoon chipotle pepper or to taste
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 cup chopped red ripe Roma tomatoes
  • 1/4 cup finely chopped red onion
  • 1 pound cooked salad shrimp (100 ct.), thawed
  • 2 ripe avocadoes, pitted and chopped
  • Salt and pepper, to taste

Directions

  • Step 1

    COMBINE vegetable juice blend, lime juice, chopped cilantro, garlic, chipotle pepper, jalapenos, tomatoes and onions in large non-reactive bowl. Stir in shrimp and avocado gently. Season with salt and pepper to taste.

  • Step 2

    SERVE garnished with cilantro sprigs.

  • Step 3

    CHILL 30 minutes.
