Ingredients
- 1 1/2 cups R.W. Knudsen Family® Very Veggie Spicy! Vegetable Juice Blend chilled
- 3 tablespoons Santa Cruz Organic® Pure Lime Juice
- 2 tablespoons chopped cilantro, plus sprigs for garnish
- 1 teaspoon minced fresh garlic
- 1/8 teaspoon chipotle pepper or to taste
- 1 jalapeño pepper, seeded and finely chopped
- 1 cup chopped red ripe Roma tomatoes
- 1/4 cup finely chopped red onion
- 1 pound cooked salad shrimp (100 ct.), thawed
- 2 ripe avocadoes, pitted and chopped
- Salt and pepper, to taste
Directions
- Step 1
COMBINE vegetable juice blend, lime juice, chopped cilantro, garlic, chipotle pepper, jalapenos, tomatoes and onions in large non-reactive bowl. Stir in shrimp and avocado gently. Season with salt and pepper to taste.
- Step 2
SERVE garnished with cilantro sprigs.

CHILL 30 minutes.
